Day 44: April 5th/Tuesday

ACTIVE REST DAY: NO WORKOUT

6:30: Veggie quiche, 2 cups of coffee, 8 ounces of water
10:00: Apple butter stove-top oatmeal, 8 ounces of water
1:00: 1 pumpkin protein muffin, 1/2 canned green beans with pintos
4:00: Sweet potato chili
6:30: Spanish tilapia with 1 cup steamed broccoli
9:30: Protein shake


VEGGIE QUICHE

  • 1/4 cup corn
  • 1 tb mushrooms, chopped
  • 1/2 cup spinach
  • 1/4 cup bell pepper, chopped
  • 1/8 cup cucumber, chopped
  • 4 egg whites
  • 1/4 cup chick peas
  • 1 tb oregano
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1/4 cup rotisserie chicken
APPLE BUTTER OATMEAL
  • 1/2 cup oatmeal
  • 1 tsp vanilla extract
  • 1/2 tsp butter extract
  • 2 egg whites
  • 1 cup water
  • 2 splenda packets
  • 1 tb cottage cheese
  • 1 tb fat-free cream cheese
  • 1/4 green apple chopped
  • 4 strawberries
  • 4 cashews, 3 almonds
Directions:
  1. Bring  water, egg whites, and oatmeal to boil.
  2. Stir and combine vanilla and butter extract.
  3. Add splenda, apples, cottage cheese, and cream cheese till cream cheese has melted.
  4. Top with 4 strawberries and mixed nuts.
SWEET POTATO CHILI
Makes 6 servings
Ingredients:

* 1/2 cup black beans
* 3-4 oz peeled and cubed sweet potatoes
* 2 cloves minced garlic
* 1/2 cup diced yellow onion
*  1/2 cup lower-sodium chicken broth
* 3 oz cooked cubed chicken breast or turkey breast
* 1 tsp ground cumin
* 1/2 tbs chili powder
* dash chipotle chili powder (to taste)
* 1/4 cup frozen corn
*sliced tomatoes
*1 tsp cocoa powder
*salt and pepper

Directions:

Peel and dice sweet potatoes. Coat and toss with Pam cooking spray. Spread evenly on a cookie sheet and bake in an oven preheated to 350 degrees for 10-12 minutes or until tender. Remove from oven and let cool.

Coat large pan with cooking spray and add thinly sliced or diced onion. Saute until it starts to brown. Add garlic and all seasonings. Cook for 3 minutes or until it becomes fragrant.

Rinse and drain kidney beans. Pour about 1/2 of kidney beans in the blender and puree.

Add all remaining ingredients to pan with grilled onions - including pureed beans, remaining whole beans, cubed chicken, and baked sweet potatoes. Heat to boiling while stirring. Then turn heat to low and simmer covered for 30 minutes.


Add a dollop of Greek Yogurt to each serving if desired.
